Products 

Heidefisch GmbH markets approximately 800 tons of rainbow trout and 90 tons of caviar annually. The main marketing period is in November, December, and January/February of each year, as optimal caviar quality with good flesh quality can be achieved at this time. Since rainbow trout are farmed, the fish's flesh is red. With our trucks, we deliver our goods fresh to our customers on the day of slaughter, within 24 hours, to always ensure high product quality.

Rainbow Trout

In November/December and January/February, rainbow trout are available in the following standard sizes:

- 1.0 - 1.5 kg

- 1.5 - 2.0 kg

- 2.0 - 2.5 kg

- 2.5 - 3.0 kg

Frozen fish can be purchased year-round, depending on availability.

Soft-Shelled Trout Caviar

We offer fresh soft-shelled trout caviar from November to December. It is also available frozen upon request. This caviar is offered in various packaging options according to customer preferences. The salt content of the caviar can also be adjusted.

The standard packaging options are:

- 5.00 kg bucket

- 1.00 kg tray

- 0.50 kg tray

- 0.25 kg tray

Hard-Shelled Trout Caviar

We offer fresh hard-shelled trout caviar from January to February. It is also available frozen upon request. During this time, our fish are ripe for spawning, and we harvest the caviar by stripping the rainbow trout. This caviar is offered in various packaging options according to customer preferences. The salt content of the caviar can also be adjusted.

The standard packaging options are:

- 1.00 kg tray

EU-Certified Slaughterhouse

The rainbow trout we produce are slaughtered on our own premises once they reach market maturity. The advantage is clear: our trout can be slaughtered on-site with very little stress, avoiding long transport routes and waiting times. In this way, we ensure an animal-friendly procedure that also benefits product quality. After acclimation and holding for about 8 days before slaughter, the trout are gently removed from the water using a vacuum pump and stunned after weighing. A gill cut then follows for killing. Our slaughterhouse is EU-certified and meets the highest hygiene standards. We regularly train our employees in adhering to food production procedures. Furthermore, we voluntarily undergo regular quality and hygiene inspections by an independent institute. Since 2020, Heidefisch GmbH has been IFS-certified.
